Microwave 2-minute Chocolate Chip Cookie for One 
Ingredients
1 1/2 tablespoons white sugar
1 1/2 tablespoons brown sugar
2 tablespoons salted butter (softened)
2 tablespoons beaten egg
1/4 teaspoon vanilla extract
5 tablespoons all purpose flour
1/4 teaspoon baking soda
1/4 cup semisweet chocolate chips
Directions
In a shallow, microwavable bowl, place 1 1/2 tablespoons sugar, 1 1/2 tablespoons brown sugar, and 2 tablespoons salted butter (softened at room temperature).
Fluff them together using fork, until fluffy and well mixed.
Beat one egg well and add 2 tablespoons beaten egg to the butter mixture.
Mix together using fork or whisk. Add 1/4 teaspoon vanilla extract.
Add 5 tablespoons all purpose flour to the mixture. Add 1/4 teaspoon baking soda.
Mix well with spoon or whisk, until smooth.
Stir in 1/4 cup chocolate chips (semisweet is what I used) and roughly flatten the dough in the bowl.
Microwave the dough for 2 minutes on high. And ta-da! It’s all ready!! Top it with your favorite ice cream and drizzle with chocolate syrup, if desired.

Frosty S’more Cups

Mini Pumpkin Oreo Cheesecake:
2-8 oz pkgs. cream cheese, softened.
1/2 c. sugar
2 eggs
2 tbsp. sour cream
1 tsp. vanilla
1/2 c. canned pumpkin
1 tsp. cinnamon
48 oreos
1 c. cool whip

Preheat oven to 350* Place cupcake liners in a muffin pan. Beat the cream cheese until creamy. Add the sugar and cream again. Add the eggs one at a time beating after each one. Add the rest of the ingredients and beat again.
Place one whole oreo in the bottom of the cupcake liners and fill the liner 3/4 full with the cheesecake batter. Push another whole oreo into the top of the batter. Bake for 20-22 minutes. Cool in pan for 15-20 min before removing and placing on a wire rack to finish cooling. Keep refrigerated. Top with whipped cream and oreo sprinkles before serving. Makes 24.

I based this off a recipe I found on Shape.com. It wasn’t exactly a light recipe, and didn’t have the pumpkin flavor I have been craving lately, so I twerked it quite a bit and came up with this. Very yummy, I think I did a good job making this my own :)
